The Melbourne Cup is the race that stope the nation; there is no question.  The fact is that people stop for different reasons.  It is the collective reasons that make this day so iconic, such a big part of Australian culture.

For some, it is the all about the racing culture; the magnificent horses and their jockeys, the stats and punting.

For others, it is about the fashion and festivities.

For all, it is about the bubbles/beer and amazing food at 3pm on a Tuesday afternoon in spring.  That’s where we come in!

Wherever you find yourself on November 6 2018 at 3pm, be surrounded by amazing food.  We have designed a menu that covers all bases; offering as much or as little as you need.  You may be a small office group only stopping for a few hours to watch the race in the conference room, or you may be several branches getting together for the afternoon to make a day of it.  This menu starts with a selection of grazing platters and you can build it up from there.  This menu can be substantial enough to be lunch or just a few nibbles to have while you cheers your win!  Starting from $15 per person you can’t go wrong.

Vegan Caramel Slice

RECIPE-

  • Base
    • 2.5 c nuts (pecan, cashew, almond, hazelnut or walnuts)
    • 1 c dessicated coconut
    • 4 fresh dates (remove seeds)
    • 1/4 tsp cinnamon
    • 1 tbsp maple syrup
    • 2 tbsp LSA (ground linseed, sunflower, almond)
    • 2 tbsp water
  • Caramel
    • 1 c liquid coconut oil
    • 1/2 c nut butter
    • 1 tsp vanilla paste
    • pinch salt
  • Chocolate top
    • 130g cocoa butter
    • 1/2 c cacao powder
    • 1/4 c maple syrup
    • 1 tbsp rice malt syrup

METHOD-

  1. Combine all the base ingredients in food processor and blend until well combined.  Line a 20x10cm slice tin with greaseproof paper and firmly press base mixture into the tin. Freeze.
  2. Place all caramel ingredients in food processor and blend until smooth and well combined.  Pour over base and spread evenly.  Freeze.
  3. Put cacao butter in a pan and gently melt over a low heat.  Once melted, remove the pan from heat and add the remaining ingredients, whisking until well combined.  Pour over the caramel and freeze again to set.  Cut into bite-sized pieces and keep in fridge or freezer

Let the School Holidays Begin….

The school holidays are upon us again, yes, already! School holidays are different for each family. Some parents do not get time off, so it is routines as usual. Some parents stay home with the children for 2 WEEKS, which can be full of ups and downs! For all of us, this time comes with its different challenges, both positive and negative.

What I have learned, as a parent and teacher, is that 99% of the time, well planned time is 99% more positive. Have a plan. It does not have to be a detailed, perfectly timed plan (unless that’s your thing). Try to have one thing each day that is focused on the kids. Let them choose from a list or fill up the calendar for the holidays in advance, whatever works for your family. Kids like to know what to expect and they LOVE to know that it involves something fun for them.

Just days into the school year and I am already reminiscing about our perfect summer holidays.   Lazy days spent at the beach, eating and drinking with friends, fun times with the kids, making special memories.  

It has come to an end and I have mixed feelings: Mr. I does better with the routine school provides; Miss L is happy to see all her friends in the playground, and I am ready to get back into work.  But as so many of you know, the school lunch tedium also begins.

Some start the year with gusto, having recipes planned, the freezer full of baked goods and plenty of lunch box ideas.  I, on the other hand, have only just snapped out of holiday mode and beginning to think of ways to sustain, nourish and amuse the kids with what I pack.

What do dinners look like in your home?   

Small families of three, like mine, where dinners are usually quiet and always early. We all sit at our roundtable, with a game of high/low (best and worst of the day) which usually ends in laughter or serious conversations.

Large families, with six children under 10, where dinners are definitely not quiet… lots of giggles, sometimes tears, usually some food on the floor and if the kids are lucky- dessert!

Extended families, with grown children, their partners, and all the grandchildren…. laughing, talking, singing and sometimes, dancing.

Newlywed couples, late night dinners with music, wine, endless banter and laughter…time spent planning and dreaming.
